Serves 2

Ingredients

3 chicken breast fillets, cut into stir-fry strips
1 egg white
1 tbsp cornflour
1 tbsp vegetable oil
½ green pepper, chopped
3 large or 6 small spring onions, chopped
1 fresh green chilli, finely chopped

For the sauce:
3 tbsp chicken stock
3 tbsp lemon juice
2 tbsp light soy sauce
2 tbsp dry sherry
1 tbsp sugar
2 tbsp cornflour

Method

  1. Mix the chicken beasts, egg white and 1 tbsp cornflour together in a bowl and leave to marinate for at least 5 minutes.
  2. Heat the oil in a very hot wok and stir-fry the chicken for about 5 minutes until it turns white.
  3. Add the pepper, spring onions and chilli, and stir-fry for another 2 minutes.
  4. Mix the sauce ingredients together in a cup or jug, add to the wok, lower the heat slightly and simmer for about 5 minutes until thickened.
  5. Serve with plain rice and prawn crackers.
