Total cooking and preparation time approximately 20 minutes plus marinating time

Serves 3-4

Ingredients

4 boneless chicken breast fillets, diced
8 spring onions, cut into 1 inch strips
6 kebab skewers

For the marinade:
2 tbsp soy sauce
1 tbsp white wine vinegar
1 tbsp clear honey
1 tsp sesame oil
1 clove garlic, crushed
1 tbsp root ginger, finely chopped

Method

  1. Put the chicken pieces into a large bowl.
  2. Add the marinade ingredients, mix well and leave in the fridge to marinate overnight.
  3. Put the kebab skewers into a bowl of cold water to soak.
  4. Preheat the grill to the highest setting.
  5. Drain the skewers then place the chunks of marinated chicken onto them, alternating with pieces of spring onion placed crossways.
  6. Grill for about 12 minutes, turning halfway through.
  7. Serve with sweet and sour vegetables and plain rice.
