Ingredients

14 oz tin chickpeas, drained
1 green pepper, chopped
10 cherry tomatoes, quartered
½ large or 1 small red onion, halved and sliced
1 tbsp lemon juice
2 tsp olive oil
1 clove garlic, crushed
2 tbsp dried mint

Method

  1. Combine all the ingredients together in a bowl, then serve.
