Ingredients
8 oz frozen green beans, sliced
1 tbsp olive oil
6 tomatoes, chopped and deseeded
1 shallot, finely chopped
1 tsp garlic, crushed
1 tbsp dried basil
½ tsp salt
½ tsp coarse ground black pepper
Method
- Cook the beans in the microwave according to the instructions on the
packet.
- Meanwhile, heat the oil in a frying pan on a moderate heat and fry the
tomatoes, shallot and garlic for about 3 minutes until softened.
- Stir in the beans, basil, salt and pepper, then serve.
