Ingredients
2 tbsp sunflower oil
1 small or ½ large onion, chopped
½ lb potatoes, cut into ½ inch cubes
3 fresh green chillies, chopped
1 tbsp dried oregano
Method
- Heat the oil in a frying pan on a medium heat and fry the onion for about
3 minutes until softened.
- Add the potato, stir to coat in the oil, cover and cook for about 20
minutes until tender, shaking the pan occasionally to stop them sticking.
- Add the oregano and chillies and cook for about another minute until
heated through.
- Serve, with a little grated parmesan sprinkled on top if desired.
