Serves 2

Ingredients

2 tbsp sunflower oil
1 small or ½ large onion, chopped
½ lb potatoes, cut into ½ inch cubes
3 fresh green chillies, chopped
1 tbsp dried oregano

Method

  1. Heat the oil in a frying pan on a medium heat and fry the onion for about 3 minutes until softened.
  2. Add the potato, stir to coat in the oil, cover and cook for about 20 minutes until tender, shaking the pan occasionally to stop them sticking.
  3. Add the oregano and chillies and cook for about another minute until heated through.
  4. Serve, with a little grated parmesan sprinkled on top if desired.
