Ingredients
8 oz string beans, sliced diagonally
2 tbsp sunflower or vegetable oil
1 small or ½ large onion, halved and sliced
3 eggs
¼ tsp salt
¼ tsp ground white pepper
½ cup grated Monterey Jack or medium cheddar
Method
- Bring a saucepan of water to the boil and cook the beans for about 5
minutes until tender. Drain, rinse under cold water and set aside.
- Meanwhile, beat the eggs lightly with the salt and pepper.
- Heat the oil in frying pan on a moderate heat and fry the onion until
softened.
- Add the egg mixture to the onions and stir for about a minute until
lightly scrambled. The egg should remain slightly moist; do not allow to set
firm.
- Add the beans and cook for 2-3 minutes until warm through.
- Serve.
