Total cooking and preparation time approximately 15 minutes

Serves 4

Ingredients

3 cups rice
4½ cups chicken stock
4 tsp dried coriander leaves
4 tsp dried parsley
½ tsp salt

Method

  1. Put all the ingredients into a microwave proof bowl.
  2. Stir, microwave for 12-13 minutes until the rice has softened, then leave to stand for a couple of minutes.
  3. Drain off any excess water, fluff up with a fork and serve.
