Ingredients
4 chicory heads, halved lengthways
2 tbsp olive oil
4 oz parmesan cheese, grated
1 tsp dried parsley
2 tbsp green pesto
Method
- Preheat the grill to the highest setting.
- Place the chicory halves on a baking try, cut side down, brush with half
the olive oil and grill for 5 minutes.
- Turn the chicory over, brush with the remainder of the olive oil, sprinkle
with the parmesan and grill for about another 4 minutes until the cheese has
melted and the edges have begun to char.
- Serve with green pesto.
