Serves 4

Ingredients

1½ lb fresh baby carrots
1 tbsp butter
½ tbsp light brown sugar
2 tbsp clear honey
1 tbsp dried parsley

Method

  1. Cook the carrot in boiling water for 10-15 minutes until tender crisp, then drain.
  2. Melt the butter in a frying pan over a moderate heat.
  3. Add the sugar, honey and carrots, and cook for about a minute, stirring continuously.
  4. Stir in the parsley.
  5. Serve.
