Ingredients
2 tbsp sunflower oil
½ lb potatoes, cut into ½ inch cubes
2 tbsp lemon juice
1 tsp coarse ground black pepper
Method
- Heat the oil in a frying pan on a medium heat.
- Add the potato, stir to coat in the oil, cover and cook for about 20
minutes until tender, shaking the pan occasionally to stop them sticking.
- Add the lemon juice and pepper, and cook for about another minute until
heated through.
- Serve.
