Ingredients
2 tbsp olive oil
1 lb courgettes, sliced
1 tbsp lime juice
1 tbsp dried mint
½ tsp salt
½ tsp coarse ground black pepper
Method
- Heat the oil in a frying pan and fry the courgette slices for about 5
minutes until they are browned and tender.
- Add the lime juice, mint, salt and pepper and stir well.
- Serve.
