Serves 4

Ingredients

8 oz mixed salad leaves, such as rocket, radicchio, lamb's lettuce, iceberg and curly endive.

For the dressing:
3 tbsp extra virgin olive oil
1 tbsp red wine vinegar
½ tsp Dijon mustard
1 clove garlic, crushed
½ tsp dried parsley
½ tsp dried basil
1 pinch salt
1 pinch course ground black pepper

Method

  1. Mix the dressing ingredients together in a cup or jug.
  2. Put the dressing and the remaining ingredients in a large bowl and toss well.
  3. Serve.
