Ingredients
2 x 12 tins new potatoes
1 tbsp lemon juice
3 tbsp extra virgin olive oil
2 tsp Dijon mustard
1 tsp dried parsley
Method
- Drain the potatoes, wash in cold water, drain again.
- Put the remaining ingredients in a jug and mix well.
- Halve the potatoes and put them in a large bowl.
- Add the dressing and toss until well mixed.
- Serve.
