Serves 2

Ingredients

1 lb baby new potatoes
2 tbsp olive oil
2 tbsp mayonnaise
2 tsp garlic, crushed
1 tsp lemon juice
1 tsp salt
1 tsp coarse ground black pepper

Method

  1. Preheat the oven to 200oC / gas mark 6.
  2. Put the potatoes into a shallow baking tray, drizzle with the oil and cook in the oven for about 40 minutes.
  3. Transfer the potatoes to a bowl, allow to cool slightly then stir in the salt, pepper, garlic, lemon juice and mayonnaise.
  4. Serve.
