Total cooking and preparation time approximately 40 minutes

Serves 4

Ingredients

8 parsnips
3 tbsp sunflower or vegetable oil
1 tsp salt
½ tsp coarse ground black pepper

Method

  1. Preheat the oven to 200oC / gas mark 6.
  2. Put the parsnips in a shallow baking dish.
  3. Add the oil, salt and pepper and toss until well coated.
  4. Cook in the oven for about 30-40 minutes, until golden brown and slightly crispy.
  5. Serve.
