Serves 4

Ingredients

8 oz bulgar wheat
2 tbsp dried mint
2 tbsp dried parsley
1 tbsp dried basil
1 red onion, halved and sliced
3 tomatoes, chopped and deseeded
1 green pepper, finely chopped
1 red pepper, finely chopped
4 tbsp lemon juice
1 tsp salt
1 tsp coarse ground black pepper

Method

  1. Place the bulgar wheat in a saucepan and add enough water to cover.
  2. Bring to the boil then lower the heat and simmer for 10 minutes.
  3. Strain off any excess water then add the remaining ingredients and toss well.
  4. Serve hot or cold.
