Ingredients
8 oz bulgar wheat
2 tbsp dried mint
2 tbsp dried parsley
1 tbsp dried basil
1 red onion, halved and sliced
3 tomatoes, chopped and deseeded
1 green pepper, finely chopped
1 red pepper, finely chopped
4 tbsp lemon juice
1 tsp salt
1 tsp coarse ground black pepper
Method
- Place the bulgar wheat in a saucepan and add enough water to cover.
- Bring to the boil then lower the heat and simmer for 10 minutes.
- Strain off any excess water then add the remaining ingredients and toss
well.
- Serve hot or cold.
