Total cooking and preparation time approximately 5 minutes

Serves 4

Ingredients

1½ pint vegetable stock
1 lb couscous
2 tbsp dried basil
2 tbsp tomato purée
1 tsp salt
1 tsp coarse ground black pepper

Method

  1. Add the vegetable stock to a saucepan and bring to the boil.
  2. Add the tomato purée and stir until it has dissolved.
  3. Add the couscous, basil, salt and pepper.
  4. Stir well, remove from the heat and leave to soak for about 5 minutes.
  5. Fluff up with a fork and serve.
