Ingredients
1½ pint vegetable stock
1 lb couscous
2 tbsp dried basil
2 tbsp tomato purée
1 tsp salt
1 tsp coarse ground black pepper
Method
- Add the vegetable stock to a saucepan and bring to the boil.
- Add the tomato purée and stir until it has dissolved.
- Add the couscous, basil, salt and pepper.
- Stir well, remove from the heat and leave to soak for about 5
minutes.
- Fluff up with a fork and serve.
