Ingredients
2 thick slices of bread cut from a rustic tin loaf
2 tbsp olive oil
12 button mushrooms, halved
2 tbsp garlic, crushed
4 tsp lemon juice
2 tbsp dried parsley
½ tsp salt
½ tsp coarse ground black pepper
1 tbsp butter
2 tbsp parmesan shavings
Method
- Preheat the grill to the highest setting and toast the bread on both sides
until golden brown.
- Meanwhile, heat the oil in a frying pan and fry the mushrooms for about 5
minutes until they start to colour.
- Add the garlic and fry for about a further minute.
- Add the lemon juice, parsley, salt and pepper. Stir well.
- Butter the toast, pile the mushrooms on top and sprinkle with the parmesan shavings.
