Total cooking and preparation time approximately 10 minutes

Serves 4

Ingredients

1 lb jar roasted red peppers, drained and roughly chopped
1 fresh red chilli, finely chopped
14 oz tin chopped tomatoes
3 cloves garlic, crushed
1 tbsp dried thyme
2 tbsp olive oil
1½ pints vegetable stock

Method

  1. Put all the ingredients in a blender and blitz until smooth.
  2. Transfer to a microwavable bowl, cover and cook in the microwave for about 4 minutes, until hot.
  3. Serve with crusty bread.
