Ingredients
1 lb jar roasted red peppers, drained and roughly chopped
1 fresh red chilli, finely chopped
14 oz tin chopped tomatoes
3 cloves garlic, crushed
1 tbsp dried thyme
2 tbsp olive oil
1½ pints vegetable stock
Method
- Put all the ingredients in a blender and blitz until smooth.
- Transfer to a microwavable bowl, cover and cook in the microwave for about
4 minutes, until hot.
- Serve with crusty bread.
