Total cooking and preparation time approximately 15 minutes

Ingredients
2 tbsp olive oil
1 small or ½ large red onion, sliced
1 large courgette, sliced
1 fresh red chilli, chopped
3 eggs
1 tbsp double cream
¼ tsp salt
¼ tsp ground white pepper
1 tbsp dried mint
1 oz parmesan cheese, grated
Method
- Preheat the grill to the highest setting.
- Heat the oil in a frying pan on a moderate heat and fry the onion for 3 minutes, stirring occasionally.
- Add the courgette and chilli and cook for about another 3 minutes.
- Meanwhile, beat the eggs with the cream, salt, pepper and mint.
- Pour the egg mixture into the frying pan, ensuring that it is evenly spread,
then cook for a further 3 minutes.
- Sprinkle the parmesan over the frittata and grill for about 3 minutes
until golden and set.
- Cut into quarters and serve with cherry tomato halves and toasted foccacia
bread.
