Ingredients

2 tbsp olive oil
4 oz fresh spinach leaves
4 oz closed-cup mushrooms, sliced
3 eggs
1 tbsp double cream
¼ tsp salt
¼ tsp ground white pepper
2 oz parmesan cheese, grated

Method

  1. Preheat the grill to the highest setting.
  2. Cook the spinach in the microwave on high for 2½ minutes.
  3. Meanwhile, heat the oil in a frying pan on a moderate heat and fry the mushrooms for 3 minutes, stirring occasionally.
  4. While the spinach and mushrooms are cooking, beat the eggs with the cream, salt and pepper.
  5. Pour the egg mixture into the frying pan, ensuring that it is evenly spread.
  6. Stir in the spinach, then cook for a further 3 minutes.
  7. Sprinkle the parmesan over the frittata and grill for about 3 minutes until golden and set.
  8. Cut into quarters and serve with mixed salad leaves.
