Ingredients
2 tbsp olive oil
4 oz fresh spinach leaves
4 oz closed-cup mushrooms, sliced
3 eggs
1 tbsp double cream
¼ tsp salt
¼ tsp ground white pepper
2 oz parmesan cheese, grated
Method
- Preheat the grill to the highest setting.
- Cook the spinach in the microwave on high for 2½
minutes.
- Meanwhile, heat the oil in a frying pan on a moderate heat and fry the
mushrooms for 3 minutes, stirring occasionally.
- While the spinach and mushrooms are cooking, beat the eggs with the cream, salt and pepper.
- Pour the egg mixture into the frying pan, ensuring that it is evenly spread.
- Stir in the spinach,
then cook for a further 3 minutes.
- Sprinkle the parmesan over the frittata and grill for about 3 minutes
until golden and set.
- Cut into quarters and serve with mixed salad leaves.
