Serves 2

Ingredients

8 oz tagliatelle
2 tbsp olive oil
12 oz closed-up mushrooms, halved
2 oz butter, cut into chunks
1 tbsp dried sage

Method

  1. Cook the tagliatelle according to the instructions on the packet, until al dente.
  2. Meanwhile, heat the oil in a frying pan on medium-high and fry the mushrooms for 7-8 minutes, until cooked, then set aside.
  3. Drain any remaining oil from the frying pan and discard.
  4. Add the butter, increase the heat slightly and cook for about 3-4 minutes until the butter goes brown and smells slightly nutty.
  5. When the tagliatelle is cooked, drain and return to the saucepan.
  6. Add the mushrooms, brown butter and sage and stir until well mixed.
  7. Serve with crusty bread.
