Ingredients
1 tbsp sunflower or vegetable oil
1 large or 2 small onions, thinly sliced
2 large or 3 small carrots, sliced diagonally
½ lb firm tofu, diced
½ lb jar black bean sauce
¼ lb mangetout
Method
- Heat the oil in a hot wok, add the onions and carrots, and stir-fry for about 5
minutes.
- Lower the heat slightly, add the tofu and yellow bean sauce and stir in
very carefully so that the tofu doesn't break up. Cook for a further 10
minutes.
- Carefully stir in the mangetout and cook for about another 2 minutes.
- Serve with plain rice.
